The service and the food were excellent because we were not expected. Why book if the pubs do not offer service?

Very disappointed when we arrived, we were told that the restaurant closes at 14.00, although we book a table on Open Table for 18.30.

The service and food were excellent bearing in mind we weren't expected. Why are you taking bookings when pubs aren't expecting to provide a service?
