"Road-tired, blinking like newborns from the long haul through the vacant whiteness of snow-streaked eastern Colorado, my two cousins and I situate ourselves at an empty table in the front room of the Hot Spot. Sterling, Colorado—home of Northeastern Junior College and a state penitentiary. “Do not pick up hitchhikers,” reads a sign at the edge of town. We hesitated to detour so far from the interstate, but the online reviews beckoned. “Do we order at the counter or does someone come around?” my cousin asks to no one in particular. A long-bearded old-timer in NJC sweatpants turns to answer, wiping gravy from his mustache: “They’ll come around. Have patience. It’s like my daddy used to say…” Whatever his daddy used to say isn’t so clear, although we later learn his daddy—six times married—first came to Sterling to work the military base, which would later become a military prison, then just a prison. The important point is that the patience paid. Soon we were snacking on cheese balls more perfectly golden than any nugget ever chiseled from the Rockies. “Pitchers are only $10 on Thirsty Thursday,” the waitress advised. And so it was tall pours of peach wheat ale for apéritifs. Main plates followed close on the heels of our beer. I mowed through a third-pound never-frozen cheeseburger, generously garnished with a third-pound of pickles. Sam opted for the brisket—somewhat dry but redeemed by its tenderness. Brian worked a football-sized chicken wrap. By the time we resigned our silverware and loosened our belts, it felt as though we had nowhere to go but Sterling, the hearth of Colorado barbecue, the holy of holies. For its service, for its flavors, for its symbolic place in the told and retold narrative of the American west, we unhesitatingly award: 3.9 stars."
