After pestering the chef on social media to find a place where I could finally try his tacos, I was able to catch him at Ruby Room for Cinco de Mayo. My Mexican friends were initially skeptical about a white guy making vegan tacos, but after trying them, they were sold. After persistently searching for an event to try these tacos, I finally caught up with the poor guy crazy on social media and found him at Ruby Room for Cinco de Mayo.
