The cellar will positively surprise you; Josu has slowly but steadily created an astonishingly good one on which your only concern will be to find a wine that matches your taste. Never mind, all of them are excellent “caldos”, get Josu’s advice. Bear in mind that food for Basques is more than feed, it is a pleasure to share with your best friends or family or, even, business partners. That is why you should take it easy, do not worry, do not be in a hurry enjoy their company, and, if you are in a hurry, note that in Bilbao you will find fast-food of all kinds. In here, take your time to taste Loli’s dishes.
