"The Ecusson Vaudois is a simple no frills auberge a few kms outside Nyon, in the village of Eysins. The restaurant was taken over in mid 2016 by a relative of the former owner, and it is becoming more popular. Most popular it is for the Malakoffs,, a local speciality served in only 3-4 local 'auberge communales ' (Luins, Vinzel, Bursins) and in the restaurant La Pinte in Nyon..... The rendition of the Malakoff at the Ecusson Vaudois is indeed very good. There is a menu of limited choice. My wife had the Entrecoe de Boeuf with morrel sauce, which was ok but not much to write home about. We had a good local Chasselas (from Eysins) which went down well with the Malakoff. Service is slow to very slow....."
