"We heard about this from a Basque family that was in NYC who said that they return and dine there every summer. It is definitely out of the way a bit, driving for about 40 minutes from Biarritz into the Pyrenees, near the Sare caves (an attraction nearby but we didn’t have time to visit, but so worth it! It is an open flame lamb roast, and you are served inside a cave. We showed up about 12 pm and hung out with the crowd (about 80 people or so and got wrapped up with a group celebrating someone’s 80th birthday. People brought music (accordion and there was group singing (Basque language I think , and highly festive. We felt privileged to be a part of it. About an hour later, we sat down in the cave and were served the most tender and delicious racks of lambs ever. Side dishes included local cheese, charcuterie, white beans and white asparagus. We unfortunately missed out on the dessert due to limited time, but what a feast."
