What are the top rated restaurants in OLBIA where I can eat Sausage?

"My wife and I are from Texas and travel in Sardinia for 5 weeks, hunt good food and the sights of this incredible island. We arrived in Olbia today and started looking for the top restaurant in the old town. The two most obvious high ratings were easy to find, but both were closed on Wednesday. So we stumbled into this brightly illuminated restaurant pizzaria on an attractive sidewalk in the historic center. The place was full of locals sitting outside in Piazza, but we asked for a table. We sat from the owner right next to the beautiful oven and watched the pizza-maestro form of dough and work this oven. We didn't want pizza, so we ordered spaghetti Vongole and the grilled seabread, several pages and a bottle of local vermentino. While we waited, I went to Googe and read the reviews. I was worried because some people long ago said the portions were small and not fresh. The place did not seem very rated by the reviews. I suspect these reviews because we sat next to the oven and open kitchen, and I watched the action. They were really good, and the cook knew what he was doing back there. The Vongole came and it was a huge dish of spaghetti with about 30 fresh shells.... It was fantastic. The grilled fresh whole fish was really great. The vegetables and salad were wonderful. I also watched the pizza cook (outside the main kitchen) and this pizza looked first-class Roman style tuna. This place was full of locals (except season) and was excellent. So you can believe that a 65-year-old who has traveled the world for decades and is a cook and food fanatic, or you can believe that some people three years ago who thought their pizza was too thin and complained about the portion sizes. Nonsense! This place was great, and I rarely write restaurant reviews. But I felt compelled to try to correct the fake plate after I had a fantastic meal tonight."

"Came here as we were staying in a hotel about 10 minutes drive away, and were beginning to regret it a little as the drive was along steep winding narrow roads. However glad we persisted, as not only were we rewarded with a great view, but had a fantastic meal with excellent service with nice crisp table linen, all for a very reasonable price. The restaurant is actually part a holiday apartment complex and I guess, being the start of the season, there unfortunately wasn't many diners, in fact it was empty when we arrived at 7:30. We were offered drinks, and complimentary ham, sausage, cheese and bread was provided. We decided to go for the set menu, which was any 3 courses from 4 (anti pasti, prima, seconds, dessert) for 20 euros pp. Everything we chose was good, including the complimentary bread and amuse bouchée. Stand out dishes were mussels (freshest and most succulent that we've had for a long while), monkfish salad, pasta, and grilled seam bream. Every dish was beautifully displayed, tasty and well seasoned. Service provided by Vanessa and her colleague was excellent, giving us good information and with humour. We really enjoyed our evening at Ristorante Sabores and, now that we know the road, wouldn't hesitate in returning."
