"Under the old management this restaurant had a great reputation for traditional bourgeoise style cuisine, it became the favourite dining spot for Saint-Malo 's well heeled. The family that owned it sold out and with them went the family chef(s) that had delivered good quality traditional...cuisine for years. In the aftermath, the new owners tried to reproduce the standards that had made the restaurant so popular, they failed. Claudie and I boycotted the restaurant for four years after a particularly poor menu gastronomique, which cost a lot and totally failed to deliver on every front. We had heard rumours that standards had improved and that they had regained a Michelin star and so, on an impulse, decided to return; oh happy day. They have not gone back to the old Tirel formula but have instead upped their game and are now offering the very finest in modern haute-cuisine and our meal was a revelation. The menu, a sort of pic 'n mix, offered a variety of a la carte options. It could have been complicated but the water told us, just choose what you want and at a stroke all was made clear. The standard of cooking was exemplary, imaginative, artistic and perfectly executed, carpaccio of langoustine, red mullet in perfectly matching sauce and a tangy black olive powder, were just a few of the delights we enjoyed that day. Unusually, they also performed equally brilliantly on deserts with the Peruvian Grand Cru concoction delivering genuinely new tastes. The service was impeccable and the table layout classic, a welcome relief from the french predeliction for kitch, given half a chance.The only minor blot on their copybook was that the wine, advertised as Chablis 2015 was in fact 2016, a minor matter but at this level they need to get their wine list managed properly to meet the food. Would we go again? You bet we would, we are already working out when we can next manufacture an excuse to go again. Clearly food of this standard doesn 't come cheap but it is so well worth the money."
