"We started our trip in Paris where, of course, we ate well. We continued to the lovely Ariege region, where the restaurants are not ready for prime time. And then we moved on for a night in Le Camargue, before heading back to the States. We stayed at the Mas de Calabrun--ok but nothing to write home about. However! We had dinner in the hotel's restaurant, Le Coursejade, a beautifully arranged space with windows looking out at the pretty grounds.The amuse bouche arrived--a thick whirl of watermelon and grenadine that knocked our socks off--so different, so concentrated, and so fabulous I wanted to lick the inside of the small elegant flute. I said to my husband, "This augers well." What an understatement. The menu is limited. Three choices for each course, but trust me, you will find what you want to eat. I had a caprese salad that looked like a painting. I'd never known what a difference the right olive oil could make. My husband had shell fish (which I am allergic to and couldn't taste) but he moaned with pleasure over every bite. My second course was a filet, his was fish, and both were magnificent. Generous portions, perfect accompaniments, wonderful sauces. We looked at each other and agreed that this was our best meal of this trip in France! It was our anniversary, we were drinking a lovely champagne, and we allowed ourselves dessert. His was chocolate, mine strawberry and I can't begin to describe the depth of flavors. You will have to dine there yourself to find out. Price for quality--excellent. Compared to equivalent Parisian wannabes, a bargain. Don't skip the breakfast buffet if you are staying at the Mas, because it's wonderful too."
