"Es war wieder einmal so weit, dass wir (9 Personen) am 26. Nov. 2015 die hausgemachte Metzgete in der Obermühle Flaach geniessen konnten. Eine authentische "Metzgete-Stimmung" in den Stuben im sehr schönen, einzigartigen Riegelhaus (ehemals Teil der Mühle). Meistens bringen wir es fertig, alle 3 oder 4 angebotenen Metzgeten pro Jahr zu besuchen. Die Leberwürste sind m.E. von den allerbesten der Betriebe, die ich kenne. Halt so, wie sie an "Puuremetzgeten" sein müssen. Kein mit dem "Blitz" gemachtes Brät, sondern lecker aus dem Fleischwolf. Eine gute Leberwurst muss "fliessen". Die Blutwürste mit ganz feinem Schnitt, gut gewürzt (zum Teil kann man etwas mit Salz nachwürzen, damit der Geschmack noch besser zum Tragen kommt). Beim Halsspeck und beim Gnagi hat der Koch / Metzger ebenfalls ein besonders gutes Händchen, was die "Selchung" (Beizen / Salzen) betrifft. Eine ganz besonders gute Würzmischung. Der Halsspeck in der Obermühle ist für Kenner und Liebhaber auch ein Muss, und das Gnagi "zittert", wenn man auf den Tisch klopft… perfekt, wie es sein muss. Die Bratwurst mit Zwiebelsauce ist auch gut, ist mir aber zu fest im Brät (wie es in unserer Region leider ist). Die Schlachtplatte in der Obermühle ist berühmt und stellt etwas dar. Wir ziehen jedoch die Einzelbestellungen vor, dann wird nichts kalt. Es ist Tradition in der Obermühle, dass es KEINE Rösti gibt, das muss man aus organisatorischen Gründen in der Küche halt einfach akzeptieren. Salzkartoffeln, das ist auch wichtig, sind immer auf den Punkt gegart, das Sauerkraut ist nach meinem Geschmack und es werden auch noch Apfelstückli oder -Mus angeboten. Das "Geschnetzelte" und die "Läberli an Sauce" sind OK, und das Schweinskotelette hat noch nie enttäuscht. Habe ich was vergessen? Geht einfach mal ausprobieren. Das Authentische, die Landbeiz im Riegelhaus, die Stuben und der Duft der Metzgete machen aus dem Besuch ein ehrliches, rustikales Erlebnis. Eine Reservation ist empfehlenswert."
