"This was our third dinner here and each and every time there are new dishes to discover so there is never remotely any sense of repetition, even though the cuisine is so wonderful here we wouldn't mind eating the same meal a thousand times over!...The dining room is very well lit which after recent experiences in New York where you need to use the torch on your phone to read a menu is a very welcome and refreshing change. Indeed, I find the somewhat dated decor really rather charming in a comforting sort of way. The food was as delicious as always and it was nice to see the evolution and ever so subtle tweaks here and there such as slightly lighter and less sweet friandises. The type of cuisine served here is unapologetically classical and all the better for it the quality of the raw ingredients is top notch and the skill in preparing them is stellar. Waldhotel is in my top five Michelin restaurants worldwide and is somewhere that I'll continue to return to time and time again... indeed we've already booked again for the start of the summer"

"At the beginning of our Moselsteig hike was Trier. We arrived by train in the afternoon and first checked our hotel in Porta Nigra. From the backpack we explored Trier. For 19:00 we had reserved a table in the Brasserie Trier, without any problems before the post of home. We already knew the Brasserie, in May 2013 we had migrated the Ausoniusweg from Bingen to Trier and closed this hike with a spontaneous visit to the Brasserie Trier. He was in such a good memory that I remembered when I was looking for a restaurant for the evening that I wanted to invite my wife for my birthday. The brasserie is located in the middle of the town on the Fleischstraße. They are entered by a covered and demarcated outer area. The equipment is very classic. Healthy ambience welcomes you. A lady from the service team got us and led us to a table. There was the first beautiful surprise, the table was festively covered for my wife's birthday. They had the reason of my reservation, he was in the mail, not read out. Very pleasant. I answered the question of a complaint with the request for two glass of champagne. A good tempting Ruinard was served. With this glass in the hand we studied the map. Classic French and regional dishes have been offered, you can see the map on the HP. In addition, some day recommendations were written on tables throughout the restaurant. With the champagne came fresh baguette, served in a paper bag, with a cream gurke dip. The waitress responsible for our table gave us some time and then asked our selection. The following foods should be: A muffled cauliflower soup for my wife For me a tart of beef fillet The cauliflower soup of my wife was odorous extremely tempting, fresh over the soup of seasoned summer truffles spread her tempting aroma. I was allowed to taste, soup came with a pronounced floral aroma, bound very Ally, would have been delicious even without truffle, with the truffle became a very noble appetizer. My tartar came to a delicious taste, processed with cucumbers on the table. A fresh taste through an excellent meat quality made it a pleasure, even if I had tasted it much less piquant in a very good meat. Together with the peasant bread a very decent dish! Main food: Well-kept cod for my wife Perlhuhnbrust for me The cod of my wife was excellent, also here I was allowed to drink only if this fishing is really delicious. In combination with mustard foam, roasted herbal lobes, Puy lentils and small potatoes a very good cod. I had chosen a beaded chest. Crispy roasted on the skin, it was filled with a farce of goat cheese, dried tomatoes and thyme. Perfectly cooked, juicy and well supplemented by the farce in taste. A classic risotto, also perfectly prepared here, exactly al dente, the rice with a rest of bite. Shit! Dessert: Greeting Flameury for my wife A Schokopudding for me My wife's greeting flame was served with a spicy goose, visually a leak. I didn't put grits like that, my wife tasted very good. I actually managed not to order cream bread in a French restaurant. Instead, I wanted to try the homemade (the best of the world after the map) chocolate pudding. I wasn't disappointed that was an excellent Schokopudding. Very dark chocolate make it rather sweet, which was supplemented with acidic cherries processed in pudding and a cream hood. Bee! In addition to the champagne, two wines accompanied us through the evening: A Riesling Spätlese dry SL from the VDP Winery Schloss Lieser Thomas Haag, one of the best wines of the Mosel hiking week, also in competition with some first and great places we would still drink. We visited Lieser Castle in the hiking week. To the desserts a fruit-sweet Riesling on the recommendation of the house of a Trier winery, I unfortunately no longer know the name. A special praise is the service team, it was really full on Saturday night, all service employees had to do uninterrupted, but the waitress who was responsible for our table always had an eye on us. Conclusion: We felt very good, an unrestricted recommendation for the Brasserie Trier from our side. I take it forward, we had some nice restaurant visits in the hiking week, but that was one if not the best of the week! For good 130 EUR a very nice evening!"
