hangs at the siciliana too cooked. for an Italian restaurant it's really a shame, the pasta was so cooked that it was immangeable. When we make gratin pasta, we cook them very little to compensate for the fact that they're still going to pass in the oven. there "the slice" really has to make an effort to make al dente pasta.
