we could taste an excellent pizza, very well-kept digestible, over various specialties of the frying. to mention the frittate of pasta. recommended.

"Il Rifugio Dell’Aquila (or Eagle’s Refuge) sits in a rural site at the edge of town making access and parking very easy. It is a rustic Trattoria that offers a slow food experience. In addition to pizza cooked in the wood-fired oven, the menu focuses on traditional Sicilian cuisine of the Madonie area. Products are drawn from local farmers. Our group of 6 chose the fixed price meal of antipasti, primi of home made pasta with fungi and barbequed meats and salad for the main course. A chocolate cake arrived with coffee. The antipasti was composed of a number of local cheeses, a selection of olives, smoked vegetables and many other delights. With a carafe of local wine, the $18 euro price was great value. One of our company forgot to advise of a dietary requirement and the owners cooked a complete replacement dish at no extra cost. The owners were very proud to explain the authenticity of their food. A quirky side-light is the natural history collection in rooms surrounding the courtyard. Minerals and fossils, fungi, insects, beetles, butterflies and a vast array of vertebrates in bottles. A visit to the latter is probably better left until after your meal."
