Kyōten Sushiko - Austin

If my rating is based only on food, Kyoten is clear 5 stars. As a veteran of many Omakasen restaurants, however, the entire culinary experience left something to be desired. The restaurant itself is decided blanden and unsightly, with garish lighting. Perhaps this is useful to highlight the food. Close your eyes and imagine spectacular sushi (prepared by someone in jeans with their hair below) with strangers in your cousin efficiency apartment while listening to their college mix on Spotify. For many people who are willing to spend $300 per couple without drinks, a more intimate atmosphere would be welcomed. The meal was artistically prepared by Chef Sarah, who obviously has skill and passion for her craft. Because it's just her and an assistant who prepared everything in real time, it took 2.5 hours to complete about 15 pieces of nigiri/small plates. The pace was a little slow for me. The vast majority of this time was to hear Chef Sarah. I enjoyed the technical information she provided, but I could have done without the social comment. It's not easy on the boss. 2.5 hours is a long time to hear someone unless they are extraordinarily captivating. Let me repeat that the food was incredible. If you are a purist who simply wants world class sushi, skillfully prepared, this is the place for you. For an intimate evening with your spouse, however, there are other sushi options to consider in Austin.

We came to dinner Grandmakase. The small Sushi counter seats only 8 will give you an intimate culinary experience with Otto. Maybe some friends with your dinner companion. This is the purest sushi experience I found in Austin (and in total rarely in the USA). There are no roles. Wasabi root is rubbed on the shark skin reamer right in front of you. There is a lot of attention to tradition. And there's a lot of attention on the fish. You can dig and hear about the origin and opinion of the boss about the quality comparison from where to source. That was a highlight for us. So much of our food to hear as it tastes (and the taste is on site) and be able to choose cook brain. Very recommended.

Is it hyperbole to call this sacred dining? I think not. It is clear that the charming chef Otto has studied his craft as a monk might study a holy text. Rice his prayer, fish his sacrament, and sake his blessed water. The dinner is pricey but once in a lifetime kind of dinner. Melt in your mouth sushi with subtle notes of complex and delicious flavors. Don't miss out on this experience... The chef is sadly leaving for Chicago in August and will charge nearly double there.
