We took the truffle class yesterday that was taught by the talented Rodrigo. It was so much fun! We learned to create our own granche to fill our truffles with after mixing our chocolate with cream. We tempered chocolate to make the shells too. We had lots of options to add to the chocolate granche (chili, cinnamon, ginger, sea salt, etc. so that added some spice.
